Roast Pork Tenderloin

Ingredients

2lb boneless pork tenderloin

Salt

Pepper

4 potatoes 

1/4 c olive oil

1/4 c maple syrup

2 T minced garlic

1 T mustard

2 t rosemary

 

Directions

1. Heat oven to 400 degrees.  Season pork with salt and pepper on both sides.  Cut up potatoes in bite size pieces and place in a 9"X13" baking pan.  Drizzle with 2 Tablespoons of oil and season with salt and pepper.  Place pork on top.

2. In a small bowl, whisk together 1/4 c oil, maple syrup, garlic, mustard, and rosemary.  Pour over tenderloin.

3. Roast for 1 hour or until potatoes are tender and pork is cooked through.  (Internal temperature should read 145 degrees.)
